14 hidden animal ingredients even long-time vegans miss
The animal ingredients that catch experienced vegans out are the ones with industrial names or that never appear on the label at all: carmine, shellac, isinglass, bone char, L-cysteine, lysozyme, castoreum, gelatin in juice clarification, and source-ambiguous additives like E471.
1. Carmine (E120)
Crushed cochineal insects, used as red dye. Also labelled cochineal, carminic acid, Crimson Lake, Natural Red 4 or CI 75470. Found in red sweets, fruit yoghurts, soft drinks, some sausages and most red lipsticks.
2. Shellac (E904)
Lac-bug resin. Almost never called shellac on food. Look instead for confectioner's glaze, resinous glaze, candy glaze, pure food glaze or natural glaze. On coated sweets, chocolate, apples and pills.
3. Beeswax (E901)
Also cera alba and cera flava. Glazing agent on confectionery, coated fruit and supplements.
4. Isinglass
Made from fish swim bladders, used to fine and clarify cask beer and some wines. Because it is a processing aid rather than an ingredient, it does not have to appear on the label at all. This is why vegan beer lists exist, because you cannot determine it from the bottle.
5. Bone char in sugar
Some cane sugar refineries use bone char as a decolourising filter. The char is not in the sugar, but the sugar has passed through it. Practice varies by refinery and country; beet sugar never uses it. Rarely determinable from a label.
6. L-cysteine (E920)
A dough conditioner in bread, bagels and baked goods. Can be synthetic, or derived from duck feathers, or historically from human hair. The source is essentially never declared.
7. Lysozyme (E1105)
An enzyme from egg white, used as a preservative in some hard cheeses and wines.
8. Castoreum
A secretion from beaver castor sacs, historically used in "natural flavouring", especially vanilla and raspberry. In practice it is now extremely rare and expensive, and it appears on far more internet lists than food labels. Included here because you will encounter the claim, and the real prevalence is very low.
9. Gelatin in drinks
Used to clarify some fruit juices, ciders and beers. As a processing aid, frequently unlabelled.
10. Mono- and diglycerides (E471)
Plant oil or animal fat, undeclared. In bread, ice cream, margarine and cake. The most common ambiguous additive in the food supply.
11. Bone phosphate (E542)
What it says on the tin: an anti-caking agent from animal bone.
12. Vitamin D3 (cholecalciferol)
Usually derived from lanolin, the wax from sheep's wool. Common in fortified plant milks, cereals and supplements, which is a considerable irony. Lichen-derived vegan D3 exists and is usually advertised, since it costs more.
13. Omega-3 in fortified foods
Often fish oil, even in products otherwise plant-based. Algal omega-3 is the vegan alternative and is normally stated.
14. Natural flavouring
An umbrella term that can cover animal-derived sources. Legally compliant, deliberately non-specific, and essentially unresolvable without asking the manufacturer.
The pattern underneath
Look at the list and a structure emerges. There are two distinct categories, and they need two different responses.
Declared but disguised: carmine, shellac, beeswax, E471, E542, E920, E1105. These appear on the label under names most people do not recognise. A scanner solves this completely, because it is a pure matching problem.
Not declared at all: isinglass, bone char, gelatin clarification. These are processing aids, and no amount of label reading or scanning will find them. Only certification solves this, because certification examines the process rather than the ingredient list.
Knowing which problem you are facing tells you which tool to reach for. Scanning for the first category is fast and reliable. For the second, look for the Vegan Society trademark, V-Label or Certified Vegan mark, and for beer and wine specifically, consult a dedicated vegan alcohol reference.
Nobody reads every label perfectly forever. The goal is to catch the common ones automatically so your attention is free for the ambiguous cases. Carmine and shellac should be handled by software. Whether a particular cask ale was fined with isinglass is a research question, and the place to spend your attention.
